What we're eating - Baked Zucchini Fries


Don't these look yummy, we had these the other night with some chicken quesadillas.

I found a recipe on the Our Best Bites blog and it looked so yummy!  And you know what...  IT IS! I did change a few things so below is my version of the recipe.



Baked Zucchini Fries
Recipe adapted by me from Our Best Bites

About 1 large zucchini
1/4 c. Italian-seasoned bread crumbs
1/4 c. grated Parmesan cheese (the crumbly stuff, not shreds)

1/4 c. Batter Mix (I use Fry Krisp, it's the best!)
2 eggs
Preheat oven to 425. Spray a baking sheet with non-stick cooking spray. Set aside.
Combine bread crumbs, Parmesan cheese and batter mix. Set aside.
Whisk 2 eggs together in a shallow pie plate and set aside.
Cut the zucchini into a french fry shape.
Dip the zucchini sticks in the egg, shake them to remove any excess, and then roll them in the bread crumbs. Place the coated strips on the prepared baking sheet and repeat until all the zucchini strips have been coated.
Bake for 10-12 minutes in the prepared oven then remove from oven, flip the fries, and bake for another 10-12 minutes or until the zucchini is not soggy and the coating is crisp and golden brown. 
Eat them fast before the kids eat them all!

Gone but still here... Alzheimer's


My Grandfather has Alzheimer's and the past two years he has gotten worse. He has not been able to remember who I am for several years and has a lot of trouble remembering his four children. One day he knows who they are and the next he doesn't. It's quite sad and I really feel for my Mom, Aunt and Uncles. It must be so hard for them to have to remind their father who they are.

The man I knew was strong, stubborn, very Catholic and very Republican. He worked very hard and provided well for his family. He was old school, believing women stayed in the home, which was hard for me as the oldest grand daughter. Most of all he was so very proud of his family, his four children and 11 grand children and now 10 great grand children. He loved us all dearly and at family events he always let us know with a little speech at prayer time about his love for family.

Writing this I feel as I am writing about someone that has passed away, but he is still here. Which makes it all hard because most of the his memories have passed on. One good thing is he has not forgotten his wife... he knows her everyday and that makes it all somewhat o.k. Because I think that would break my heart if he every forgot her.

What I'm reading: A Coal Miner's Bride


A Coal Miner’s Bride: The Diary of Anetka Kaminska
by Susan Campbell Bartoletti

I don't have a lot of free time to read, but I do pick up a book from time to time. While at the library with my girls I saw this book and it caught my eye. Yes... it is from the junior section of the library, but I just wanted something quick and interesting to read.

This was the perfect short book, written in a diary style. It was quick and I learned a bit about how life might have been for a polish girl sent to America for an arranged marriage. Since it was a book for teens it did lack the juicy details you might expect. But all the same it was a nice little story.

Corners of my home - Garden Bed

 We have a lot of bunnies in our yard and last year they chewed through my netting, so this year we stepped it up a notch! We had picked up this bed frame from the trash curb a while ago, I had plans to make a bench for the yard. But then we had the idea to use it for our garden bed... get it "bed"... I know a bit cheesy. But it was free wood! Brian painted it white to match our picket fence and lined it with chicken wire. I think it looks cute and it should keep those pesky rabbits out of our little garden!
